Lemon Drizzle Cake


I’m a huge fan of baking and one of my favourite things to bake is a lemon drizzle cake. I love how it’s so quick and easy to make, plus it always tastes so delicious.

I follow the Mary Berry recipe for this one, but change 1 1/2 eggs to 2 eggs purely because I can’t be bothered to split an egg in half haha! This recipe is one of those all in one bowl bakes so saves with washing up too, which is a plus. I’m baking this one as it’s my mums birthday today, and she wanted to take in a little something for her and her work colleagues. Good job really because I’m trying to eat healthy and exercise, so the sooner this cakes gone the better.

To make this yummy cake you will need-

1 1/2 eggs

87.5g self raising flour

87.5g caster sugar

87.5g butter

3/4 tsp baking powder

Zest of 1/2 lemon

For the lemon icing you will need-

50g granulated sugar

Juice of 1/2 lemon

Now to make it you literally put all the ingredients for the cake part into one bowl, and beat them using an electric whisk or a good old fashioned wooden spoon. Then turn the mixture into a loaf tin and pop in the oven for 35 minutes on gas mark 4.

You want to take it out when it’s just turning a nice golden colour, so if thats before the 35 minutes it’s ok but just make sure it’s cooked through the middle. Then get the cake out of the oven, which will be smelling amazing at this point. Mix the lemon juice and the granulated sugar together, then slowly pour it over the warm sponge. When the cake cools, the lemon and sugar mixture hardens and makes a sugary crust all over the cake. This cake can only be described as heavenly.
